"Popcorn" is the nickname we gave to our incredibly active son. If you spent 2 minutes with him, you will easily understand the meaning of the nickname. The Chinese Noodle is the affectionate nickname we chose for our hoped for Daughter-to-Be, who may one day come to us in the LORD's perfect time from China.

Let's Do Lunch: What's in the Garden?

I love that we have a Garden!
God blessed us with a home sitting right on what used to be
a Horse Pasture (years ago), so our soil is
Excellent!
We planted a garden in April, and are
harvesting wonderfully healthy vegetables
each and every day now!
This is today's bounty.  Every morning, Popcorn & I go out
with my big Pink Basket to see what the Lord has given us for the day's meals.
Today, it seems we have an abundance of Zuchini, and some cucumbers.
Hmmm... what can we create from this?
Lunch was quickly whipped up... Black beans in a Black cast iron skillet with some Tomatoes and Chili powder.  Next, we added Chopped Chives and Red onion, a little basil and a touch of chopped lemon balm leaves for some zing.  Top it with a big sliced cucumber, plop it all on a large whole wheat tortilla, and call the men.  It's time for lunch!

Even children love them.
I call these "Whatever Tortillas"

Isn't Our God Terrific?  He gives us nutritious gifts in the form of vegetables (free).
